If you are 80, you should have an elite skill, because you can't unlock an elite spec like soulbeast without fully training the base class first. If you want soulbeast, you require Path of Fire. I don't have the new expansion, so I don't know how it does hero points, but you will get HP 10 at a time in PoF, so it will probably unlock soulbeast
You need 250 hero points to fully unlock an elite specialization. The fastest way to get those is in HoT, a total of 400. PoF is for the most part easier to get, 290 points. Testing out an elite spec to see if you like it is available in the pvp lobby as long as you have the corresponding expansion.
Most important instances from that season you can play either as fractals or as solo instances in the Eye of the North. But there are not in a way that you can experience the story in series. You can learn a recap and them play all the instanced parts that are in the game. Everything else was actually open world events so no way to re-release
Stop worrying about level 80. You get there and then you still have to grind, grind and grind, etc. It is a total anti-climax. Take it in the long term and enjoy the game and the world. With all the expansions and other DLC (which can be purchased later) you have a wonderful world in GW2 to enjoy and explore. Stop the fixation about Level 80.
Okay, so you've picked one of the game's harder classes, and you've jumped in at level 80 straight away. Before you worry about gearing and builds my genuine suggestion would be to level a different character first, so that you know how the game works. Then come back to your revenant when you have a better idea of what to expect.

Then put that toon away and level what will be your main the old fashioned way but with a mount and glider. Lovaa.
At level 11, you'll be able to use hero points to unlock new traits and skills. Don't worry too much about what skills and traits are the best for your class; from now until level 80 is the time where you want to experiment with different skills, different weapons, and different armor stats to find your playstyle.
